You can disable/temporarily hide a category simply by clicking "Edit Category" for the category you want to hide & uncheck the box called "Category is visible to customers" & Save. See screenshot below. This will remove the category from your site until you recheck the box and save it again.
Keep in mind, when you do this, it disappears instantly, but you'll have to restart the browser to see the changes on your end (a new clean session).
